If you go to Maui you MUST go to Mama's Fish House. There's a reason it's on all the must-do lists. But make your reservation ASAP as it books up months in advance. Road to Hana is worth it but start early. We've been to Maui a couple times (got engaged at the end of Road to Hana and went back for our honeymoon) and love it (although the Big Island is our favorite).

thank you for the tip on Mama's Fish House! i've been reading a lot of subreddits who all say the same thing. i managed to snag a dinner reservation in advance just in case we end up in Maui (which 95% chance we will, haha)...since the time difference will likely mess with us, i think we'll do RTH one of the first days we are there to knock that off the list. any other sights or must-eats in Maui?

We wanted to try lau lau and got a recommendation for Waikapu On 30 and it was amazing. It's this little roadside shack basically but delicious food. I don't know if it's still pink but there's a pink pond at the Kealia Pond National Wildlife Refuge. It was kind of fun to see. Monkeypod has THE BEST mai tai's. Neither my husband or myself liked mai tai's until we tried theirs. Star Noodle lives up to the hype. I believe they are open again after the fires and totally worth going.
